RHUBARB CRUNCH | |
1 c. granulated sugar 1 c. flour, sifted 1 tsp. baking powder 1 egg, beaten 1/2 c. shortening (Crisco) Dash of salt Sift sugar, flour and baking powder together. Cut in shortening. Add egg and salt. Crumble over sweetened fruit. Bake at 350 degrees for 45 minutes in 8 x 8 x 2 inch pan. When using rhubarb, use 1 cup sugar mixed with 4 cups sliced fresh rhubarb. Put this mixture in a greased pan, crumble the topping over and bake. I mix strawberries with my rhubarb. Don't use as much sugar on rhubarb if you use sweetened strawberries. You can use other fruits, such as cherries. The rhubarb is a favorite at my house. It is good hot or cold, with or without ice cream or whipped cream. |
