REUBEN CASSEROLE 
Pumpernickel or rye bread (I prefer pumpernickel)
1 can drained sauerkraut
1 can corned beef, crumbled
2 c. Swiss cheese, sliced or grated
1/2 c. mayo
1/4 c. 1000 Island Dressing
2 sliced or cubed tomatoes
2 tbsp. melted butter

Mix together mayo and dressing. Layer ingredients in 9"x13" pan, greased with Pam or butter.

Corned beef

Cheese

Recipe doubles for 10"x13" pan. Cover with dressing mixture. Melt butter and saute some bread crumbs to sprinkle on top of casserole. Bake at 375 degrees for 30 to 45 minutes. Garnish with tomatoes.
