RICE PUDDING 
2/3 c. minute rice
2 3/4 c. milk
1/3 c. sugar
1/2 tsp. salt
1/3 c. raisins
2 eggs, slightly beaten
1 tsp. vanilla
1/4 tsp. nutmeg
Jello custard mix, prepared

Combine minute rice, milk, sugar and salt. Keep raisins separate. Bring to boil in saucepan, stirring frequently. Reduce heat and simmer 10 minutes, stirring occasionally. At low speed with hand mixer, mix eggs, vanilla and nutmeg in large bowl. Slowly add rice mixture, raisins and prepared Jello custard mix. Mix well and put into 1 1/2 quart casserole. Place casserole pan in pan of hot water. Bake at 375 degrees for 20-30 minutes, or until center is set. Cool at least 1 hour before serving. Makes 6-8 servings.
