MUSHROOM SOUP 
1 qt. mushrooms
1 1/2 qt. good rich stock (veal or chicken)
1 tbsp. flour
1 tbsp. butter
1 tsp. salt
1/2 tsp. pepper
whipped cream
croutons

Wash and peel 1 quart mushrooms and dice. Stir into them 1 1/2 quarts of good rich stock (veal or chicken). Thicken with 1 tablespoon flour creamed with 1 tablespoon butter, 1 teaspoon salt and 1/2 teaspoon of pepper. At the last moment, add a bit of whipped cream and croutons.
