COFFEE CAKE 
1 pkg. yellow or white cake mix, dry
3/4 c. salad oil
3/4 c. water
4 eggs
1 pkg. instant vanilla pudding, dry
1 tsp. vanilla
1 tsp. cinnamon
1/3 c. sugar

Mix first 6 ingredients together well. Divide half of this mixture between 2 loaf pans. Mix sugar and cinnamon and sprinkle half of this between the two pans. Top each pan with the remaining batter and sprinkle the remaining sugar mixture on top. Bake for 45 minutes at 350 degrees. Freezes well.
