PUTANESCA SAUCE A LA MANGANO 
6-8 diced fresh tomatoes (or 3 cans stewed or chunky tomatoes)
4 cloves garlic, diced
2 onions, diced
2 c. olive oil
1 lg. bunch parsley, chopped
1 lg. bunch fresh basil, chopped
1/4 oz. capers, chopped
2 cans anchovies
1/4 tsp. oregano, dried
3 tbsp. freshly grated Romano cheese
1/2 tsp. freshly ground black pepper
2 or 3 cans freshly diced pitted black olives
1/4 to 1/2 c. chopped walnuts or pignoli nuts (whole)
2/3 can mushrooms, drained

All ingredients are approximations and can be adjusted for individual taste. Prepare ingredients in advance. Brown garlic and onions in olive oil and stir in anchovies with its oil. Add all other ingredients and cook, covered, slowly for about 3/4 hour. For flavors to blend; stir occasionally. Serve over your favorite pasta for a delightful meal.
