CLASSIC CHEESECAKE 
1 c. graham cracker crumbs
1/2 stick butter, melted
6 eggs, separated
1 tsp. cream of tartar
3 tbsp. sugar
19 oz. cream cheese
1 1/2 c. sugar
3 tbsp. flour
1/2 tsp. salt
16 oz. sour cream
1 tsp. vanilla

Have all ingredients at room temperature. Preheat oven to 325 degrees. Mix butter and crumbs together and press into a well-greased 10 inch springform pan; set aside.

Add cream of tartar to egg whites; beat until foamy. Gradually add 3 tablespoons of sugar and beat until stiff; set aside. Beat cream cheese until soft. Mix sugar, flour and salt; gradually beat into cheese. Add egg yolks, one at a time, beating well after each addition. Mix in sour cream and vanilla. Fold in egg whites.

Pour into prepared pan and bake for 1 1/4 hours or until set. Open oven door; let sit 10 minutes. Dust with powdered sugar. Serve with fresh raspberry sauce, strawberry sauce or hot fudge sauce.
