SQUASH CASSEROLE 
1 1/2 lb. squash (approx.) cooked & mashed
1 sm. onion, chopped
1/2 stick butter
1 1/2 tbsp. candied ginger, chopped fine
1/2-1 c. sour cream (depending on moisture content of squash)

Top with grated cheese. Bake 45 minutes in 350 degree oven.
