SPINACH RICE CASSEROLE | |
10 oz. pkg. frozen spinach, thawed and drained 3 c. cooked rice 1/2 c. minced carrot 1/4 c. minced onion 1 1/3 c. evaporated milk 1/2 c. oil 3 eggs 2 tsp. salt 1/4 tsp. pepper 1 c. shredded sharp cheese In a large bowl, beat milk, oil, and eggs. Add all other ingredients and mix well. Pour into greased crock pot. Cook on high 1 hour, then on low 4 to 6 hours. Stir during first hour. May be baked in 325 degree oven for 1 hour instead of crock pot. Reduce oil if baking. |
