PORK CHOW MEIN 
1 1/4 lb. diced pork
1 med. chopped onion
1/4 c. butter
2 tsp. salt
1/4 tsp. pepper
1 c. diced celery
1 1/2 c. water
1/2 c. sliced water chestnuts
2 cans LaChoy bean sprouts (drained)
1 can sliced mushrooms

THICKENING:

3 tbsp. cold water
3 tbsp. cornstarch
3 tbsp. soy sauce
1 1/2 tsp. sugar

Sear pork and onion in butter until browned. Add salt, pepper, celery and water. Bring to a boil; cover and simmer 15 minutes. Add bean sprouts, water chestnuts, and mushrooms. Heat until hot; stir in thickening. Cook until slightly thickened. Serve over rice or chow mein noodles. (Chicken may be substituted for pork.)
