MOM'S JEWISH APPLE CAKE 
4 eggs
2 c. sugar
4 tsp. baking powder
4 tsp. cinnamon
1 c. baking oil
2 tsp. vanilla
4-6 tart apples, peeled & sliced thin
2 c. flour, sifted
1/2 tsp. salt
1 c. nuts (opt.)

Or 1/2 can apple pie filling (also slice apples thin and use the pie filling too.

Mix eggs and sugar; add oil, stir in sifted flour, salt and rest of dry ingredients; add vanilla. Fold in apples and nuts. Pour into greased and floured 9"x13"x2" pan. Before putting cake in oven to bake, sprinkle over entire top of cake a mixture of 2 tablespoons sugar and 1 teaspoon cinnamon. Bake at 350 degrees for 40 to 50 minutes, NO LONGER.
