BEEF & ZUCCHINI CASSEROLE | |
4-5 c. unpeeled zucchini, sliced 2 tbsp. butter 1/2 c. chopped onion 1/2 tsp. salt 1 1/4 lb. ground beef 1/2 lb. processed cheese, sliced 1 (10 1/2 oz.) can cream of mushroom soup 1/2 c. buttered bread crumbs Melt butter in a skillet. Add onion, salt and meat. Cook until lightly browned. Place a layer of sliced zucchini in a buttered 2 1/2 quart casserole dish. Cover with a layer of meat mixture, then a layer of cheese. Cover with half of soup. Repeat layers and remaining soup. Sprinkle bread crumbs over soup. Bake, uncovered, at 350 degrees for 1 hour. |
