BEEF AND ZUCCHINI CASSEROLE 
4 c. zucchini, unpeeled & sliced
2 tbsp. butter
1/2 c. onions, chopped
1/2 tsp. salt
1 1/4 lbs. ground beef
1/2 lb. American cheese, diced
1 can cream of mushroom soup
1/2 c. buttered bread crumbs

Melt shortening, add onion and salt and meat. Cook until browned. Place a layer of zucchini in a buttered 2 1/2 quart casserole. Cover with layer of meat mixture, then layer of cheese. Cover with half of mushroom soup. Repeat process and sprinkle top with bread crumbs. Bake uncovered at 350 degrees for 45 minutes.
