BEEF ZUCCHINI CASSEROLE 
3 med. zucchini, sliced into rounds
1/2 c. olive oil
Salt & pepper to taste
3 med. onions, sliced
1 green pepper, chopped
1 clove garlic, chopped
3 tbsp. butter
2 1/2 lbs. ground round
2 tsp. salt
1/2 tsp. pepper
1 tbsp. oregano
1 (6 oz.) can tomato paste
1 c. sm. curd cottage cheese
2 c. grated Mozzarella cheese
1/4 c. grated Parmesan cheese

Saute zucchini in oil until barely done. Season with salt and pepper; set half the zucchini aside. Fry onions, green pepper and garlic in butter; remove and add to zucchini. Brown beef, pour off any drippings and season with salt, pepper and oregano. Add tomato paste and cook over low heat 3 minutes.

Combine meat and zucchini mixture. Add cottage cheese and mix well. Place in large casserole and sprinkle with Mozzarella cheese. Bake covered in a 350 degree oven for 30 minutes. Remove and sprinkle with Parmesan cheese and arrange the remaining zucchini on top. Bake uncovered for 15 minutes.
