ZUCCHINI BEEF CASSEROLE 
1 lb. hamburger
1/3 c. chopped onion
1 clove garlic
1 (16 oz.) can tomatoes
3/4 c. rice
2 tbsp. Worcestershire sauce
Salt and pepper to taste
1 c. shredded Cheddar cheese
1 lg. zucchini, unpeeled, sliced
1/2 c. Monterey Jack cheese
1 c. sour cream

Brown beef, onion and garlic. Add tomatoes, rice, Worcestershire sauce, salt and pepper. Cook until rice is tender. Add 1/2 cup Cheddar cheese. Cook zucchini in water until tender.

In a 2 quart casserole dish, layer meat mixture with zucchini, Monterey Jack cheese and sour cream. Top with remaining Cheddar cheese and bake in a 350 F. oven for 25 to 30 minutes.
