FRUIT PIZZA
1 1/2 c. flour
1 stick butter, melted
1/2 c. powdered sugar
2 (8 oz.) pkgs. cream cheese
1/2 c. granulated sugar
1 tsp. vanilla
1 lg. can pineapple chunks
Any other bite-size pieces of fruit
1/2 tbsp. cornstarch
1/2 tsp. lemon juice

Mix flour, butter and powdered sugar in food processor. Press into pizza pan to form crust. Bake at 350 degrees until it browns about 10-15 minutes. Cool.

Mix the 2 packages of softened cream cheese with the granulated sugar and vanilla. Mix in food processor until smooth. Spread on crust. Top spread with the can of pineapple chunks (reserve the liquid); and any other bite-size pieces of fruit you desire.

Mix pineapple juice, cornstarch and lemon juice. Cook in the microwave until thick. Cool; pour over the fruit as a glaze. Slice into wedges, like pizza, and serve.

OPTIONAL: Instead of glaze, sprinkle Fruit Fresh on top of fruit.

Since microwave ovens vary in power, you may need to adjust your cooking time.
