SPINACH RICOTTA STUFFED TURKEY
BREAST
 
1 pkg. (10 oz.) frozen chopped spinach, thawed partially, drained
1 c. ricotta cheese
2 tsp. coarsely ground pepper
1 tsp. seasoned salt
1 tsp. nutmeg
1 pkg. (2 1/2-3) turkey selects turkey breast half
1 tbsp. olive oil

Prepare grill; heat until coals are ash white. Meanwhile in medium bowl stir together all ingredients except turkey breast and olive oil.

Stuff spinach ricotta mixture underneath skin of turkey breast brush with olive oil. Cover grill turkey for 1 hour and 40 minutes or until meat thermometer reaches 170 degrees. Let stand 20 minutes or serve at room temperature. Serves 4 servings.
