FRUIT PIZZA 
1 Pillsbury sugar cookie roll
1 (8 oz.) pkg. cream cheese
1 sm. container Cool Whip
Fresh fruit, sliced as desired
About 1/2 c. powdered sugar
1 sm. jar apricot preserves

Spray an average size pizza pan (14 inch) with non-stick spray. Slice cookie dough and arrange over pan; press with heel of hand to form crust over entire pan. Bake at 25 degrees lower than package directions and 2 to 4 minutes longer until crust is light brown. Cool. Mix Cool Whip, cream cheese, and powdered sugar (to taste). Spread over cooled crust. Arrange fruit in rings on "sauce" as desired. Melt apricot preserves in a small saucepan. Brush over the "toppings". Refrigerate. Cut into wedges like a pizza to serve.
