SMOTHERED FIELD PEAS 
2 tbsp. cooking oil
6 c. fresh field peas
1 medium onion
5 c. water
salt and pepper to taste

Saute onions in oil until golden brown, stirring frequently. Add 1/2 cup water, then simmer 8 minutes. Stir in peas and smother for 20 minutes. Add 1 cup water and smother for 15 minutes. Add the 5 cups water and cook for 45 minutes. Season to taste. Freezes well. You can also use black-eyed peas if you wish.
