FIELD PEAS 
1 c. dried field peas
6 c. hot water
1 slice salt pork
2 tbsp. minced onion
1 tsp. salt

Wash peas thoroughly. Place in a kettle with hot water and the remainder of the ingredients. Cover; bring to a boil and then reduce heat. Simmer over low heat for 2 1/2 hours or until peas are tender.
