GRACE'S DRESSING 
3 (1 lb.) loaves of bread, cut into cubes & dried
3 c. diced celery
6 eggs, beaten
4 oz. mushrooms
1 med. onion, diced
Giblets, chopped
Turkey or chicken broth
Salt & pepper to taste (3 tsp.)
New sage (smell to see how strong it is) (3 tsp.)

Simmer giblets in about 4 quarts or more salted water 2 hours. Use 1/2 the broth in the dressing and the other 1/2 in the gravy. Mix everything together in 2 large bowls. Add more hot water if needed. It should be pretty moist, almost too runny. Keep tasting until the salt and sage are right. Bake 2 1/2 hours at 325 degrees. Cover if it starts to get too brown.
