SZECHUAN PEANUT BOW TIES 
8 oz. (about half of bag) bow tie noodles

Cook noodles according to package, but be sure not to overcook. Cool noodles by pouring ice cubes over drained noodles. Pour sauce over cool noodles and serve as side dish or add chunks of chicken breast for main course.

HOT PEANUT SAUCE:

1 tbsp. finely minced garlic
2 tbsp. finely minced fresh coriander
1/4 c. unseasoned peanut butter
1/4 c. plus 1 1/2 tsp. soy sauce
2 1/4 tsp. Chinese rice wine or dry sherry
2-3 tsp. hot chili oil

Blend all ingredients until emulsified and smooth, by hand or with the food processor. Taste and adjust seasoning with an extra dash of soy sauce or sugar. If making ahead, use less chili oil. Refrigerate to store it, but return to room temperature before using. Makes 3/4 cup of sauce.
