HARVEST MOON CHOWDER 
1 lg. onion, chopped
1 c. thin sliced carrots
1 c. broccoli flowerets
1/4 c. butter
1 (13 oz.) evaporated milk
1 c. Cheddar cheese
1 c. finely diced potatoes
1/2 c. finely diced celery
2 c. chicken broth
4 tbsp. flour
2 c. milk
Croutons

Place onion, carrots, potatoes, celery and chicken broth in large kettle. Simmer 15 minutes. Melt butter, stir in flour, then add evaporated milk and milk. Stir until smooth. Add vegetables. Simmer until thick. Add cheese, garnish with croutons. May leave out broccoli and add 1 cup extra cheese and 1 cup ham.
