CREOLE CABBAGE 
1 med. cabbage, cut in 8 pieces
1 onion, sliced crosswise
2 fresh tomatoes, diced
1/2 med. bell pepper, thinly sliced
2 tbsp. bacon drippings

Into large iron skillet, put bacon dripping. Let it become war, not hot. Add cabbage and over it a layer of onion. Add tomatoes and pepper mixed. Sprinkle with salt and pepper. Add 2 cups boiling water. Let come to a boil. Turn fire low and cover skillet. Let cook slowly 30 to 45 minutes, turning occasionally with a fork. Should be fairly dry.
