FRIED RICE 
2 c. rice
1 lg. onion
1 bell pepper
2 diced carrots
1 lg. diced potato
2 tbsp. oil
2 or 3 tbsp. soy sauce
Ham or chicken

Cook rice as directed on box. Set aside and let cool. Cook potato, onion and carrots in oil until tender. Add cooked ham or chicken and bell pepper to mixture above. Simmer for a few minutes. Add rice and soy sauce. Let cook about 5 minutes. Add more sauce if desired.
