VEGETARIAN SPAGHETTI SAUCE 
1 lg. onion
1 sm. green bell pepper
1 c. chopped celery
4 c. chopped zucchini
Garlic to taste (I use 2 tsp. minced)
2 pkgs. spaghetti sauce mix (dry)
Oregano to taste
Cayenne or other spicy seasoning to taste (not too much)
2 (32 oz.) jars spaghetti sauce or 4 cans tomato sauce
1 (16 oz.) can peeled tomatoes
1 can tomato paste if thicker sauce is desired

Chop (I use the food processor) then saute first 5 ingredients (microwave or top of stove) in small amount oil. Add next 5 ingredients. Season to taste. Simmer a while or heat and serve. Freezes well. Makes a great lasagne sauce as well. Makes 1 gallon.

Since microwave ovens vary in power, you may need to adjust your cooking time.
