COMPANY POTATOES 
6 med. potatoes
1/4 c. butter
2 c. shredded cheddar cheese
1 pt. sour cream
1/3 c. chives
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter
Paprika

Cook potatoes in skins. Chill. When cool, peel and grate into lightly buttered casserole dish. Over low heat (double boiler) combine 1/4 cup butter, 2 cups cheese until almost melted. Remove from heat and blend in sour cream, chives, salt and pepper. Pour over potatoes and stir lightly. Dot top with 2 tablespoons butter and sprinkle with paprika. Bake in 350 degree oven for 35 minutes. This can be frozen or stored in refrigerator overnight before baking.
