CRANBERRY CHOCOLATE ORANGE BREAD | |
2 1/2 c. all-purpose flour 1 c. granulated sugar 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 3/4 c. oil 1 c. buttermilk 2 lg. eggs 2 tsp. grated fresh orange peel 1 1/2 c. chopped cranberries 6 oz. (1 c.) semi-sweet chocolate chips 1 c. chopped walnuts 1/2 c. powdered sugar mixed with 2 tbsp. orange juice In a large bowl mix flour, granulated sugar, baking soda, baking powder and salt. Add oil, buttermilk, eggs, and orange peel. Stir with wooden spoon just until blended. Stir in cranberries, chocolate chips and nuts. Scrape into 2 greased and floured 8 x 4 inch loaf pans. Bake in a preheated 350 degree oven for 1 hour or until toothpick inserted in center comes out clean. Cool in pans on cake racks for 10 minutes. Run knife around edges to loosen. Remove from pans, turn right side up. Immediately brush tops with confectioners' sugar mixture. Cool completely on rack. Makes two loaves. Per slice: 171 cal, 2 gr. pro., 20 gr. carb., 10 gr. fat, 16 gr. chol., 75 mg sod. Especially good for the Holidays. |
