SWEET POTATO CASSEROLE 
4 sweet potatoes, baked and mashed
1 med. can chunk pineapple
1 egg, beaten
1/2 tsp. salt
Corn flakes

Drain pineapple and mix with mashed potatoes. Add salt and beaten egg to the potato mixture. Crush the corn flakes. Form balls of potato mixture with chunk of the pineapple in center of each ball. Roll in crushed corn flakes and place in a buttered baking dish.

TOPPING:

1/2 c. brown sugar
1/4 c. butter
Pineapple juice

Combine juice, sugar and butter. Bring to a boil and stir constantly for 5 minutes. Pour over potato balls. Bake at 350 degrees for 30 minutes.
