SWEET POTATO PONE

4 c. shredded raw potato (1 lb.)
1 c. water
1/2 c. packed brown sugar
1/2 tsp. salt
1/4 tsp. ground ginger
2 tbsp. butter

Combine potatoes, water, sugar, salt and ginger; turn into 1 quart casserole. Dot with butter. Bake at 350 degrees until potatoes are tender and caramelized, stirring occasionally, about 2 hours. Makes 4 servings.
