FRUITED SHRIMP SALAD 
3 c. water
2 (8 oz.) cans unsweetened pineapple tidbits, drained
1/2 c. chopped celery
1 1/2 tsp. lemon juice
1 lb. unpeeled lg. fresh shrimp
1 (11 oz.) can mandarin oranges in light syrup, drained
3 tbsp. reduce calorie mayonnaise

Bring water to a boil, add shrimp and cook 3 to 5 minutes. Drain well, rinse with cold water. Chill. Peel and devien shrimp. Combine shrimp and next 5 ingredients, tossing gently. Chill and serve on lettuce leaves.
