HEAVENLY FRUIT FLUFF SALAD
(DIABETIC)
 
1 (16 oz.) can sugar free fruit cocktail
1 (8 oz.) can sugar free pineapple tidbits
1 (16 oz.) can sugar free light cherries OR
1 1/2 c. fresh grapes
1 tbsp. cornstarch
1 tsp. sugar
1 c. unsweetened pineapple juice
1/2 tsp. artificial liquid sweetener
1 orange, diced
1 (1 1/4 oz.) env. artificially sweetened whipped topping mix

Drain fruits; set aside. In saucepan, combine cornstarch and sugar; slowly stir in pineapple juice, cook and stir over low heat until thick. Cool, stir in fruits and liquid sweetener. Prepare topping mix as directed on package and fold into fruit mixture. Chill at least 4 hours. Spoon into lettuce lined bowl. Makes twelve 1/3 cup servings.
