“PEPPER JACK MEATLOAF” IS IN:
NEXT RECIPE:  PIE CRUST FOR 5 PIES

PEPPER JACK MEATLOAF 
1 lb. ground beef
1 cup celery, diced
2 tbsp. onion, diced
1 cup crushed saltine crackers
2 eggs
2 cups pepper jack cheese, shredded
1 (15 oz.) can tomatoes, chopped (reserve the juice)
1/4 cup ketchup
1/8 tsp. chili powder
1/2 tsp. salt
1/8 tsp. pepper

Preheat oven to 350°F. Grease a loaf pan.

Mix meat, celery, onion, juice from can of tomatoes, crackers, eggs, chili powder, salt and pepper. Mix all ingredients together well. Press half of the meat mixture into prepared loaf pan.

Sprinkle cheese over meat mixture. Top with remaining meat mixture and press down to seal. Mix tomatoes with ketchup and put on top of the meatloaf.

Bake, covered lightly with foil, at 350°F for about 1 hour. Remove foil and bake for another 10 to 15 minutes or until no longer pink.
