RITZ VEGETABLE CASSEROLE 
16 oz. frozen mixed vegetables
3 c. grated Cheddar
1 c. mayonnaise
3/4 c. chopped onion
1 sm. can sliced water chestnuts (optional)
Ritz crackers
1 1/2 sticks butter

Season vegetables with chopped onion. Cook and drain. Pour into 9-inch baking dish. Add water chestnuts. Mix mayonnaise and cheese. Spread over vegetables. Top with half the crackers, crushed. Melt butter and drizzle over top. Bake at 350 degrees for 30 minutes.
