COCONUT DATE BALLS 
2 eggs
1 c. sugar or 1/2 c. sugar & sugar substitute equivalent to 1/2 c. sugar, suitable for baking
1/4 tsp. salt
1 1/2 c. pitted dates, chopped fine
2 1/4 c. toasted rice cereal
1/2 c. chopped walnuts
1 tsp. vanilla
2 c. flaked coconut

Beat eggs with sugar or sugar and sugar substitute and salt until thick. Add dates. Turn mixture into heavy frying pan and cook over low heat about 10 minutes, stirring. Remove from heat; add cereal, chopped walnuts and vanilla. When mixture is cool enough to handle, pinch off portions and (with dampened hands) form into balls about the size of walnuts. Roll in flaked coconut.
