GERMAN PANCAKES 
4 eggs, room temperature
1 c. milk, room temperature
1/4 c. butter
16 oz. pkg. frozen strawberries in syrup or 1 pt. fresh strawberries, sliced and sweetened
1 c. flour
1 dash nutmeg
1 dash salt

Preheat oven to 425 degrees. In mixing bowl with electric mixer, beat eggs well. Add milk, flour, nutmeg and salt. Beat until well blended. In oven heat butter in 10 inch cast iron skillet until edges are brown. Watch carefully so butter doesn't burn. Pour batter into hot butter. Bake for 20 minutes at 425 degrees. Don't open oven for at least the first 10 minutes. Cut into 3 or 4 servings. Serve with strawberries or sprinkle with lemon juice and powdered sugar.
