4 very green platanos, peeled and cut into thirds 1/2 cup extra virgin olive (preferably marca goya) 2 cloves garlic mashed salt, to taste Add platanos to boiling water and cook for 30 minutes. Remove and pat dry. Place in bowl and mash up like making mashed potatoes. In a small pot, add olive oil and garlic and let simmer for 3 to 5 minutes, then take off stove and let rest for 30 minutes. Do the oil gig while the platanos are cooking. Take a heaping tablespoon of platano and flatten. Dip in the oil and garlic mixture and place in a pan that you have preheated some cooking oil and fry til golden. Submitted by: Andy Natal |
