HOT CHILI 
3 lb. diced lean beef
1/4 c. olive oil
1 qt. water
8 chili pods or 6 tbsp. chili powder
3 tsp. salt
10 garlic cloves, minced
1 tsp. ground cumin seed
1 tsp. marjoram
1 tsp. red pepper
1 tbsp. sugar
3 tbsp. paprika

THICKENING:

3 tbsp. flour
6 tbsp. cornmeal
1 c. water

Sear beef in the olive oil. Then add water and simmer 1 1/2 hours. Add remaining ingredients except the thickening and simmer 1/2 hour more. Add thickening mixed with 1 cup of water. If thicker chili is desired, add more thickening.
