HOPPING JOHN DRIED PEAS | |
1 lb. dried black-eyed peas 3 pts. cold water 1/2 lb. sliced pork or bacon 1 tsp. Tabasco sauce 1/2 tsp. salt 2 tbsp. bacon fat or lard 2 med. onions, chopped 1 c. uncooked long grain rice 1 1/2 c. boiling water Cover peas with 3 pints of cold water in large kettle. Soak overnight. Add salt pork, Tabasco, salt. Cover and cook over low heat 30 minutes. Meanwhile, cook onions, in bacon fat until yellow, then add to peas with boiling water. Cook until rice is tender and water is absorbed, about 20 to 25 minutes, stirring occasionally. |
