HOPPING JOHN 
1 (8 oz.) pkg. black eyed peas
1/2 lb. hambone
1 sm. onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 c. instant rice
1 (1 lb.) can tomatoes

Place the peas in a large saucepan and cover with water. Bring to a boil and add the hambone, onion, salt and pepper. Cook for 1 hour and 15 minutes. Place the rice on top and add enough water to cover rice. Bring to boiling point and cover, then remove from heat. Let stand until rice is tender, then add tomatoes. 6 servings.
