SCALLOPED CHEESE & CARROTS 
14-18 sliced carrots
1 sm. onion, minced
1/4 c. butter
1/4 c. flour
1 tsp. salt
1/4 tsp. mustard
2 c. milk
1/8 tsp. pepper
1/4 tsp. celery salt
1/2 c. any cheese (can use more cheese if want to taste)

Saute onions with butter 2-3 minutes. Stir in flour, salt and mustard. Cook a little then add milk, stirring constantly until thickened. Add pepper, celery salt and cheese. Cook slowly and stir until cheese melts. Mix with carrots (put bread crumbs on top if you like) and bake uncovered at 350 degrees for 25-35 minutes.
