SEAFOOD AU GRATIN 
1/2 lb. cooked shrimp
1/2 lb. cooked crab meat
1/2 lb. cooked lobster
1/2 lb. cooked sole
2 tbsp. butter
2 tbsp. flour
3/4 c. milk
1/2 c. grated cheese (Parmesan or cheddar)
1/2 c. Holland House white or sherry cooking wine
Bread crumbs

Cut seafood into bite-size pieces and arrange them in baking dish. Mix butter and flour over low heat and stir in milk and grated cheese. When slightly thickened, add wine. Pour sauce over seafood and top with buttered bread crumbs. Bake 20 to 25 minutes at 325 degrees, until browned.
