CHEESE MUFFINS 
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
1 egg, beaten
1 c. milk
1/4 c. salad oil
1/2 c. grated sharp cheddar cheese

Key to success is to avoid over mixing the batter.

Sift flour, baking powder, salt, and sugar in a large bowl. Make a well in center. Combine egg, milk, and salad oil; stir to mix. Pour all at once into the well in the flour mixture.

Mix quickly with fork or spoon until flour is moistened, but do not beat. Batter will contain some lumps. Fold in cheese with a few strokes. Pour into greased muffin tin for 12 - fill 2/3 full. Bake at 400 degrees for 20-25 minutes or until muffins are golden.
