SQUASH CASSEROLE 
1 lb. yellow squash, cooked and mashed
1 medium onion, chopped
2 tbsp. melted butter
2 eggs, well beaten
1 small can evaporated milk
1/2 tsp. salt
1/4 tsp. pepper

In large bowl, combine all ingredients. Place in greased casserole.

Bake 20 minutes at 375°F.

Yield: 6 to 8 servings.

Topping:

Potato chips or 1/2 stick butter and 1 cup saltines, crushed

Use potato chips or combine butter and saltines. Add topping and bake an additional 5 minutes.
