SALMON CAKES 
1 can salmon, flaked
1 c. thick white sauce
Salt and cayenne pepper to taste
1 tsp. lemon juice
Cracker crumbs
1 egg

Combine salmon and white sauce, seasonings, and lemon juice. Chill and shape. Roll in fine crumbs, then in egg and again in crumbs; fry in deep hot fat 3-5 minutes.
