CORNISH HENS 
2 rock Cornish hens
1 bell pepper
1 med. sized onion
2 stalks celery
1/2 lb. butter
1/4 tsp. seasoning salt
1/4 tsp. black pepper

Gently wash hens, then season with salt and pepper. Cut bell pepper in half. Stuff 1/2 in each hen. Cut onion in half, stuffing 1/2 in each hen. Break 2 celery stalks into 6 pieces and place 3 pieces in each hen.

Bake, covered, on 350 degrees for 45 minutes. Baste hen with melted butter and place, uncovered in oven for 15 minutes until brown.
