FAVORITE ZUCCHINI BREAD 
3 eggs
3/4 c. oil
2 c. sugar
1 tsp. vanilla
2 c. zucchini, shredded
1 sm. can crushed pineapple (optional)
3 c. flour
1 tsp. salt
2 tsp. baking soda
1/2 tsp. baking powder
2 tsp. cinnamon
1 c. raisins (optional)
1 c. nuts, chopped

Beat eggs, add oil, sugar and vanilla. Beat until light and foamy. Stir in zucchini and pineapple. Sift together dry ingredients and stir gently into zucchini mixture. Add nuts and raisins. Pour into two greased loaf pans. Bake at 350 degrees for one hour or until bread tests done.
