ZUCCHINI BREAD (Sweet) 
1 tsp. salt
2 c. shredded zucchini
3 eggs
2 c. sugar
1 c. oil
1 (8 oz.) can crushed pineapple
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. ground cloves
1 c. raisins
3/4 c. semi-sweet chocolate morsels
1 c. chopped walnuts

In a small bowl, add 1 teaspoon salt to shredded zucchini and set aside. Beat together eggs, sugar, oil and pineapple. Blend in drained zucchini.

In a separate bowl combine remaining ingredients. Add to zucchini mixture and blend thoroughly. Pour into 2 small loaf pans (one large will overflow). Bake at 350 degrees for 1-1 1/4 hours.
