CRANBERRY FRUIT BREAD | |
3 eggs 2 1/2 c. sugar 1 c. oil 2 tsp. vanilla 1/2 c. coarsely chopped cranberries 2 c. grated raw zucchini 1 (8 oz.) can crushed pineapple, drained 3 c. flour 2 tsp. baking soda 1/2 tsp. baking powder 1 tsp. salt 2 tsp. cinnamon 1 tsp. nutmeg 1 c. chopped nuts or raisins Beat eggs until light and fluffy. Add sugar and beat until blended. Stir in oil, vanilla, zucchini, pineapple and cranberries. Stir dry ingredients together and add to egg mixture with nuts or raisins. Blend well. Pour into 2 greased 9x5 loaf pans. Bake 50-60 minutes at 350 degrees. Remove from pans. Cook on racks. Chill before serving. |
