MAUI PINEAPPLE BREAD 
1 c. vegetable oil
3 eggs, beaten
2 c. sugar
2 tsp. vanilla extract
2 c. zucchini, grated
1 c. drained crushed pineapple
2 tsp. baking soda
3 c. all-purpose flour
3/4 tsp. salt
1 1/2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground allspice
1 c. golden raisins
1 c. chopped pecans

Preheat oven to 350 degrees.

Combine the oil, eggs, sugar and vanilla in a large bowl and blend well. Add the zucchini and pineapple. Mix the dry ingredients and spices together and add them to the zucchini mixture. Add the raisins and pecans and mix well.

Pour the mixture into 2 greased and floured standard loaf pans. Bake for 1 hour or until the bread tests done. Cool in the pans for 30 minutes. Turn onto rack to cool completely. Wrap and refrigerate for at least 1 day.
